Cinnamon Maple Glazed Salmon

Serves 4 · Prep 10 min · Cook 15 min

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tbsp olive oil
  • Kosher salt and black pepper
  • 3 tbsp Cinnamon Maple Syrup
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard

Method

  1. Heat the oven or grill to 400°F. Pat the salmon dry, rub with olive oil and season with salt and pepper.
  2. Whisk the syrup, soy sauce and Dijon together.
  3. Cook the salmon 10 to 12 minutes, then brush generously with the glaze and cook 3 to 4 minutes more, until it reaches 145°F and the glaze is glossy.
  4. For extra caramelization, finish under the broiler for 1 minute. Watch it closely.

Cinnamon Maple Chicken & Waffles

Serves 4 · Prep 20 min · Cook 25 min

Ingredients

  • 1 1/2 lb boneless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tbsp BBQ Pitmasters Pecan Chicken & Pork Rub
  • Neutral oil, for frying
  • 4 waffles, homemade or frozen, toasted
  • 1/3 cup Cinnamon Maple Syrup
  • 2 tbsp butter
  • Doug Marcaida's BLADEFIRE Habanero Hot Sauce (optional)

Method

  1. Soak the chicken in buttermilk for at least 15 minutes.
  2. Mix the flour with BBQ Pitmasters rub. Dredge the chicken, pressing to coat.
  3. Fry in 350°F oil for 6 to 8 minutes, turning once, until golden and 165°F inside. Drain on a rack.
  4. Warm the syrup and butter together until melted. Add a few dashes of BLADEFIRE for sweet heat if you like.
  5. Stack chicken on the waffles and drizzle with the warm Cinnamon Maple butter.
